BISON CHILI

Who doesn’t love a hot bowl of chili with garlic bread on a cool winter day?! Use your tried and true chilli recipe with bison or try our favorite one listed here! This recipe originates from the Canadian Bison Association but I’ve tweaked it to suit our taste buds. This recipe is quick and easy and can be made well in advance or just in time for supper.

Ingredients:

1lb ground bison

1 onion, chopped

1-2 tsp minced garlic

2 tsp Salt

1 green pepper, chopped

2-3 large tomatoes, diced (about 3 cups)

14oz(398ml) Can black or kidney beans

14oz(398ml) can beans in tomato sauce

2 Tbsp vinegar

1 ½ Tbsp chilli powder

1 tsp cumin

6oz(156ml) can tomato paste

In a large pot(I prefer a large cast iron dutch oven) brown the meat, onion, garlic and sprinkle with salt. Add green pepper and cook for 3 minutes. Add all remaining ingredients, cover and let simmer for about an hour. Top with shredded sharp cheddar cheese and enjoy with garlic bread!
