Bison Taco Soup

This soup is one of my all time favourites. It's hearty, full of flavor and I just love all the toppings. It's fairly easy with little steps and perfect for those chilly winter days. Try it, I'm sure you'll love it too! 

Ingredients:

1lb ground bison

1 Tbsp vegetable oil

1 onion, diced

2 cloves garlic, minced

28oz can diced tomatoes

1 can corn kernels

2 cans brown beans in tomato sauce or pork and beans or something similar

1 envelope Ranch dressing mix

1 Tbsp chili powder

1 tsp oregano

½ tsp cumin

1 tsp salt

4 cups water (or homemade bison bone broth)

Optional Toppings: Sour cream, shredded cheese, avocado, cilantro, crushed taco chips

Directions:

  1. Brown the bison, onion and garlic with the oil in a 5 quart pot.
  2. Once the bison is no longer pink add remaining ingredients and heat until it reaches a simmer.
  3. Serve with toppings of choice and enjoy!
