Bison Hamburger Helper
I love a dish that takes minimal dishes, encompasses protein, veggies and carbohydrates and can be ready in 30minutes.
I recently discovered this recipe on the web but of course tweaked it to my family's liking.
Bison Hamburger Helper
Ingredients:
Oil, butter or tallow
2lbs ground bison
454g box of short pasta (bow ties, elbow macaroni, penne, shell... etc)
4 cups bone broth
2 bell peppers diced
1 onion, diced
1 cup shredded sharp cheddar cheese
1.5 cup plain greek yogurt (or sour cream)
15oz can tomato sauce
1tsp each salt, paprika, garlic powder, chili powder
1/2tsp ground pepper
1 bag torn baby spinach, yes, an entire bag!
Method:
Sautee onion and peppers in a bit of butter, oil or tallow until soft. Add ground bison, breaking it up as it cooks. Add spices while it browns. Once the bison is no longer pink add the broth, pasta, and tomato sauce. Simmer until liquid is mostly absorbed. Add yogurt (or sour cream) and shredded cheese. Stir until cheese is melted and well combined. Add bag of spinach and stir until wilted. Serve with an extra sprinkle of cheese and enjoy!
